Cranberry Relish

Just made some cranberry relish for the holiday.
this is something my mom use to make every year for Thanksgiving, and Christmas and I try to keep the tradition going.

Well to make this cranberry relish, you will need the following

2 bags of cranberry's
4 oranges
4 apples
sugar

take the oranges and apples peel 2 oranges and cut into quarters, cut the other 2 oranges into quarters, and finally cut all apples into quarters.

Now with a meat grinder start mixing it all up apples oranges and cranberry's. till they are all ground up with the meet grinder. Mix it all up and sugar to taste, this is best done a couple days before the Holiday. as it is better the second and third days. Dont forget to add the sugar, as the cranberry's are tart

Using Wagon Wheel Pasta

here is a great item to make and have plenty of left overs for

Well we use
2 1lb bags of the wagon wheel pasta
3 cans of spaghetti sauce
2 lbs of ground meat, this doesn't have to be all hamburger, mix it up with ground chicken, turkey, or sausage choose 2


Brown hamburger and or the other meat you choose

In a pot heat up 3 cans of the Spaghetti sauce, after the meat has been browned drain it (we don't need the grease and fat in it), then add to the spaghetti sauce. In a separate pot cook the pasta till just done, and drain, don't rinse. After everything is heated up, put the pasta in a big bowl, then pour the Spaghetti/Meat Sauce over the pasta and stir it up.

This makes a great meal, and lots of left overs to extend the food budget. I also have containers I put it in and freeze so I can take it for lunch at work and saving money.

Electric Griddle

Is a Big Electric Griddle needed, my opinion is no you don't need a big electric griddle. Why you might say, well a good cast iron fry pan will do the job of a griddle and more.

Electric Griddle
Pro's nice big flat surface good for making eggs, pancakes, bacon

Con's big, over sized, hard to store, single use

you can use a cast iron skillet. big wont warp, can do your bacon, pancakes, and eggs, become virtually non stick if kept up correctly. Can cook more than a electric griddle, so more of a multi-use item

Macaroni salad

last weekend I tried a variation of Macaroni Salad

What I did was make as normal, and instead of making it with mayo, I used or drizzled Olive oil over the Salad, and also drizzled over cider vinegar, I then added good seasons Italian Dressing Mix to it, stirred it up.

I like to add to my salad other than the Macaroni, a little tuna fish, and some peas. makes for a great salad, and everyone loved it

Zucchini Chips

I have a garden here, and have two zucchini plants, well have had several item go to waist from those 2 plants so was looking for something to make with them. Well I did find something, that I can make with Zucchini, and it wasn't bad, Zucchini Chips

preheat oven to 425
Zucchini slices thinly
layer on a cookie sheet 1 layer thick
take olive oil and brush the tops with the oil
sprinkle salt on them
bake for 8 to 10 min
flip and let them get crispy

Watch closely the 2nd half, as they will burn

What is healthier

What is healthier?

I have friends who eat a lot of boxed foods, and thought I would pose this question. my Friends eat a lot of boxed foods, with all those ingredients that you might not know what they are.

Lets take a box of Mashed Potato's

which is Healthier the Boxed Mashed Potato's, or going to the store, and getting the real potato's and cooking them up and mashing them.

I say the real potato's are healthier. What do you say? True the box of dehydrated mashed potato's is more convenient and faster in today's world.

Italian Potato Salad

1. clean, and cut potatoes into chunks, par-boil until soft but not falling apart, rinse in cool water
2. while the potatoes are cooking, dice celery, an onion, one or 2 tomatoes and 2 gloves of garlic -put in a bowl
3. top vegetables with oil ( I use olive oil) and vinegar (to taste) or I have used Italian dressing too
4. I add spices like parsley, pepper and Italian seasoning to taste
5. Add drained potatoes-stir with a big spoon
6. refrigerate until cold.

Sometimes I add peppers, cucumbers too
